French Toast Mini Bites
- 6 slices whole wheat bread
- 2 eggs
- 1/2 cup almond milk
- 1/2Tbsp vanilla extract
- 3/4 cup greek yogurt
- Cinnamon to taste
- 6 strawberries & 1/4 cup blueberries
- 1Tbsp Walden Farms maple syrup
- Preheat oven to 400°
- Mix eggs, almond milk, vanilla & cinnamon.
- Spray cupcake tin with baking oil. Dip bread into egg mixture and press firmly into cupcake tin
- Bake for 10min & let cool.
- Make filling by mixing yogurt, maple syrup & cinnamon – fill cups and top with berries
